Fat Thursday in Poland. The National Polish Pączek Day Fat Thursday in Poland. The National Polish “fat doughnuts”. On Fat Thursday (Tłusty Czwartek in Polish), the Thursday before Ash Wednesday Poles forget about their diet and eat huge quantities of doughnuts. So for this occasion I have made a deliciously light and fluffy doughnuts.
- 350 g flour( I mixed wholemeal and plain flour),
- 300 g curd cheese,
- 180 yogurt ( I used vanilla flavor),
- 2 eggs,
- pinch of cinnamon,
- 1 tsp baking powder,
- pinch of salt,
- 2 tbsp maple syrup,
- oil for cooking ( I used rapeseed oil).
Add egg, yogurt, curd cheese, maple syrup and beat with an electric beater until mixture is thick, smooth and creamy.
Add flour mixture and stir.
Then add baking powder and pinch of salt.
Add the oil to a small pot.
Use a small spoon to drop about 1 tablespoon scoops of dough into the oil, careful not to overcrowd the pan.
Fry the doughnut in the oil, for about 2 minutes or until they’re golden brown. Transfer the doughnut to the paper towel-lined baking sheet.
